Hello Steve,
Thanks again for coming to Mearto for your appraisal inquiries. These items appear to be photo-lithographs after the copperplate engravings reproduction of the documents they depict. The original map of the territory of Arizona was produced in 1880, folded and included in book. Because I do not see any creases with the sheet, it is safe to assume this is a reproduction after that folded original print. The second print is of course a reproduction after the original declaration of independence, the original of which is held in National Archives. That print also appears to be a photo-lithographic print. The estimate provided is based on recent auction estimates and results of lithographic reproductions of these documents (as a collection). Thank you and please take care.
